Acadian Inspired

The Acadians were displaced from what is now called Nova Scotia. They moved to Louisiana and are now known as the ancestors of the modern Creole and Cajun cultures of Louisiana. Their cultural foods were and still are a unique mix of French and American influences. The flavors are often bold, rich and complex.


When I enlisted in the Army I pointed at Fort Polk Louisiana because among other things a it is a region rich in cultural diversity. From central Louisiana I was exposed to crawfish boils and entire restaurants that only served catfish platters. Drive 2 hours south and the mixture of seafood spice. You haven’t had fresh shrimp until you’ve bought it by the cooler load right off the boat from today’s catch.

Start heading east and you run into Lafayette and you run into more Creole and Cajun influences. Head further east and you end up in New Orleans and its surrounding cultures. This is Louisiana and there are as many variations in the food as there are stars in the sky….
